Les Cretes Chardonnay Cuvee Bois is a typical mountain wine, whose substantial mineral and savory characteristics are softened by a skilful refinement in the extraordinary barriques commissioned by the owner Costantino Charrere, according to optimal roasting levels. It was by Constantine Charrere that the Les Cretes winery in Aymavilles was founded in 1989, where the panoramic hill of the Côteau la Tour showcases its medieval tower, inhabited until the last century by a village hermit, today the symbol of the company. The production area of Les Cretes, which originates in the difficult mountain territory of the Aosta Valley, is characterized by a high fragmentation of the vineyards and high planting densities due to the slopes of the land, whose moraine and sandy soils constitute an ideal environment for cultivation of numerous native and international varieties, as in the case of Chardonnay. The alpine climate strongly influences the organoleptic characteristics of local wines: the grapes, harvested late, undergo strong changes in temperature due to the autumn temperature range; this phenomenon, typical of mountain areas, favors the formation of aromatic precursors in the bunch, which considerably enrich the most fragrant component of the wines. In this extraordinary terroir the Chardonnay Cuvee Bois comes to life, a wine with a great structure able to face long aging phases and withstand the comparison with important Chardonnays of Burgundy.
