From the 100% pure Nebbiolo grape. The Mamete Prevostini winery selects the best vineyards from the Valtellina Superiore Sassella area in Triasso in the municipality of Sondrio. The harvest begins with the harvest after the first ten days of October. The vinification requires that the grapes that are not perfectly intact or affected by mold are immediately eliminated. After a delicate destemming, the lightly pressed grapes are sent to the stainless steel tanks where the alcoholic fermentation takes place with 15 days of maceration of the skins on the must at a temperature of 25 ° C. After pressing, the wine undergoes malolactic fermentation in oak barrels where refinement continues for about 10 months. Finally, the wine is aged in the bottle for another 10 months before being marketed.
