Description
From the vinification in purity of 100% Nebbiolo grapes, dried. The provenance is the classic one of the Sforzato di Valtellina DOCG. The grapes undergo a careful selection of the most scattered bunches in the best vineyards of the Valtellina Superiore D.O.C.G. in the municipalities of Berbenno, Sondrio and Montagna in Lombardy. The harvest starts within the first ten days of October, takes place by hand and the grapes are placed in 4/5 kg boxes and left to dry naturally in the loft until December 15th. The vinification foresees that the grapes, dried until the beginning of December, are carefully selected at the sorting table where the attention to detail is at the highest levels and the grapes that are not perfectly intact or affected by mold are eliminated. After a delicate destemming, the lightly pressed grapes are sent to the stainless steel tanks where the alcoholic fermentation takes place with 18 days of maceration of the skins on the must at a temperature of 25 ° C. After pressing, the wine undergoes malolactic fermentation in oak barrels where refinement continues for about 18 months. Subsequently the wine is aged in the bottle for another 10 months before being marketed.
