The Brut “Cabochon Fuoriserie N ° 021” of Monte Rossa is one of the most famous and important Franciacortas of the appellation. The N ° 021 is an extraordinary edition of this excellence from the Cazzago San Martino house, put up for sale to celebrate the twenty-first cuvée in its history. It is a cuvée of Chardonnay and Pinot Noir created with a good percentage of reserve wines, in order to create a complex, harmonious and deep-tasting Classic Method. Thanks to a long aging on the lees, it expresses evolved notes with aromas of candied fruit, citrus fruits, hints of officinal herbs. The “Cabochon Fuoriserie N ° 021” is a Franciacorta Brut born of the passion for excellence of one of the names that have contributed to create the fame and success of this territory. Monte Rossa is a winery founded in the early 70s, which has been able to attract the attention of enthusiasts with wines made with a very personal style, based on a high quality selection of grapes, vinifications often made in wood and a search for harmony and elegance, as the leitmotif of the entire range. Cabochon perfectly represents this philosophy and is still an icon of Franciacorta today, synonymous with excellence and consistency over time. A wine that perfectly expresses the richness of a territory and its vocation to produce sparkling wines that are also appreciated outside national borders. The Franciacorta Brut “Cabochon Fuoriserie N ° 021” of Monte Rossa is produced with a careful selection of the best Chardonnay and Pinot Noir grapes from the vineyards grown in the Pratone, Barek, Brolo, Palo, Nespoli parcels. At the end of the soft pressing, the separate fermentation of each single vineyard takes place in small oak barrels. The base wines rest for a few months in wood before final assembly, with the addition of 20% of reserve wines. The second fermentation takes place in the bottle according to the Classic Method, with a stop sur lattes of at least 42 months. In the glass it is light yellow with a very fine and persistent perlage. The olfactory profile expresses aromas of citrus, mandarin peel, candied fruit, honeyed softness, nuances of officinal herbs and balsamic touches. The sip is long, intense, complex and broad, with a balanced and savory finish. A great Franciacorta to open and taste on special occasions.
