An extremely balanced wine suitable for long aging. The blend includes 80% Corvina vines to which 10% Rondinella, and 10% Oseleta and Croatina are added. The specific geographical location is that of Sant’Ambrogio di Valpolicella, a hilly area, with south-east exposure. The average altitude of the land is between 300 and 350 meters above sea level. The training system is the classic Guyot system, with an average age of the vines of 20 years. The yield per hectare reaches 80 quintals. The harvesting period falls in the first ten days of October; then follows the vinification after harvesting and manual sorting in small 5 kg crates, the grapes are left to dry for about four months in dry and well-ventilated rooms. Only in January, after the natural drying process, the grapes are pressed. This is followed by a slow fermentation for 15-20 days on the skins and aging for at least 4 years in large oak barrels and bottle aging for at least one year.
