Valpolicella Ripasso Classico Superiore Antolini is a rich and intense red, produced with the typical grapes of the Veronese area: Corvina, Corvinone and Rondinella. Despite being the youngest wine in Valpolicella by birth, it quickly became famous all over the world. It was born from the brilliant intuition of “passing over” the classic Valpolicella on the fresh pomace of Amarone, in order to enrich the wine with body, structure, complex aromas and aromas. A true younger brother of Amarone, which at the table goes very well with meat dishes, even important ones. Antolini’s Valpolicella Ripasso Classico Superiore was born on the estate owned by the company in Marano, right in the heart of Valpolicella. Nine hectares of vineyards, cultivated at an altitude between 150 and 350 meters above sea level, on hilly slopes, often terraced with dry stone walls. The vineyards are located in the territory of the municipality of Marano, San Pietro and Negrar and are cultivated both with the traditional Veronese pergola system and with the Guyot system. The mild and breezy climate, with strong thermal excursions and the suitable soils of calcareous-clayey matrix, create an ideal habitat for obtaining high quality red grapes. Fermentation takes place with indigenous yeasts. The wine is then “passed over” for the second fermentation on the Amarone and Recioto pomace for a period of about a week. The wine ages for 12 months in oak and cherry barrels before being bottled. Antolini’s Valpolicella Ripasso Classico Superiore is the perfect expression of the traditional characteristics of the beautiful hilly area of Valpolicella. An area famous for the production of great wines already at the time of the Ancient Romans and which today has conquered markets around the world. The wine has an intense and bright ruby red color. The bouquet is rich, with aromas of black cherry, dark berry fruit, vanilla and spices. The entry on the palate is harmonious and soft, with ample and complex aromas, a velvety tannic texture, a balanced and very persistent finish.
