Flamingo is the new release of one of the Franciacorta that made history and contributed to the success of Monte Rossa, the P.R. Rosé Brut. The result of the union of two fine grape varieties, 60% Chardonnay and 40% Pinot Nero. The selection of the grapes before vinification is carried out already in the vineyard, with manual harvesting in wooden boxes. The vinification involves the soft pressing of the grapes with selection of the best part of the grapes for no more than 55% of the yield. Each crü is vinified in purity. Fermentation takes place partly in temperature-controlled steel vats and partly in medium toasted oak barrels. The final refinement takes place in the bottle for a minimum of 24 months.
