A wine that represents the whole essence of the Alba area, the area within which the renowned Ratti winery has been operating for almost 100 years. For the vinification of this Barolo pure Nebbiolo grapes are used as required by the strict disciplinary. The harvest takes place during the month of October to guarantee the grapes the correct degree of ripeness and sugar content. Immediately brought to cellars, the grapes follow the de-stemming – pressing process to separate the marc from the berries. Then the alcoholic fermentation at a controlled temperature of about 30 ° C. The average duration of maceration 7 – 10 days. Malolactic fermentation follows which takes place in November in wood. Aged for about two years in 25hl and 50hl oak barrels.
