Amarone Classico “Moropio” Antolini is an intense, complex and structured red, produced with the technique of drying the grapes before vinification. A process that allows for rich and evolved aromas, which express notes of ripe red fruit, cherries in alcohol, jam, spicy and toasted hints. The sip is warm, enveloping and deep, soft and with a long aromatic persistence. An important wine, to be tasted at the table with stews and braised meats. “Moropio” Amarone comes from the vineyards of Corvina, Corvinone, Rondinella and Molinara which are located in the Classic area of Valpolicella. The Antolini estate covers a total of 9 hectares, divided into various plots, with terraces and dry stone walls, which are located at an altitude between 150 and 300 meters above sea level. In the plots cultivated on the hills of Marano the vines are trained in the Veronese pergola, while those in the municipality of Negrar are trained in Guyot. The soils are made up of clay and limestone; the cool climate, with strong temperature variations, guarantees ripe grapes with very intense aromas. After the harvest, the grapes are left to dry for 3 or 4 months before proceeding with crushing-destemming, cold maceration for 7-10 days and fermentation in steel with indigenous yeasts, with maceration on the skins for about 20 days. The wine rests in large oak, cherry, chestnut and mulberry barrels for at least 24 months and completes the refinement period in the bottle before being marketed. The “Moropio” Antolini is a Classic Amarone made with grapes from vineyards of particular value in the famous areas of Marano and Negrar, which are located within the Classic area of Valpolicella. It is a wine that conquers for its persuasive and caressing softness, for its multifaceted aromatic palette. The color is intense ruby red. The aromas are voluptuous and intriguing, with notes of ripe red fruit, jam, cherries in alcohol, soft spices, chocolate, cocoa, tobacco and balsamic hints. On the palate it is warm and structured, with deep aromas supported by an elegant tannic texture. The finish is of remarkable persistence.
